Cranberry Brie Puff Pastry Bites

INGREDIENTS:

  • 1 sheet frozen puff pastry, thawed
  • 6 oz brie cheese, cut into 24 small cubes
  • 1/2 cup cranberry sauce (store-bought or homemade)
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 egg, beaten (for egg wash)
  • Optional: chopped pecans or walnuts for garnish

RECIPE DIRECTIONS:

  1. Preheat oven to 375°F (190°C). Lightly grease a mini muffin tin or line with non-stick spray.
  2. Roll out the puff pastry on a lightly floured surface and cut into 24 even squares.
  3. Press each square into a mini muffin cup, gently shaping it into a little cup.
  4. Place one cube of brie into each pastry cup.
  5. Top each with about 1 teaspoon of cranberry sauce.
  6. Sprinkle a pinch of chopped rosemary over each bite.
  7. If desired, sprinkle chopped pecans or walnuts on top.
  8. Lightly brush the exposed pastry with the beaten egg.
  9. Bake for 12-15 minutes or until puffed and golden brown.
  10. Let cool slightly before serving. Enjoy warm.
